(or, Noah’s Pudding) is a famous Turkish dessert, prepared on the Day of Aşure. It’s name is derived from the word “ashura“, which means “tenth” in Arabic. The Day of Aşure follows the Islamic holy calendar, and falls on the Tenth of Muharrem, during the first month of the calendar. Aşure is part of the culinary tradition of Turkey, as well as many of the surrounding countries.
History tells how Noah’s Ark came to rest on Mount Ararat in northeastern Turkey, and his family celebrated with a special dessert. Since their food supplies were almost exhausted, the family used what was left (primary beans, grains and dried friut) to create a pudding, now known as aşure.

 

Ingredients

  • 3 cups uncooked whole grain wheat or barley
  • 1 ½ cups canned chickpeas, rinsed and drained
  • 1 ½ cups canned navy beans, rinsed and drained
  • ¼ cup uncooked rice
  • 3 tablespoon dried currants
  • 3 tablespoon pine nuts
  • 8 dried apricots, cut into chunks
  • 8 dried figs, cut in chunks
  • 3 cups sugar
  • 2 cinnamon sticks
  • Zest of 1 orange (optional)
  • Zest of 1 lemon (optional)
  • 2 tablespoon rose water (optional)
The important
thing is that; You may add any grain, fruit or spice to your Asure, but be careful with the boiling point or cooking time of the ingredients due to their tolerance to vanish or get a bitter taste when cooked too much.
